Liquorice (also known as spelt licorice) Glycyrrhiza glabra, has a sweet taste similar to fennel and star anise. There are many components to liquorice, but the most active is glycyrrhizin. The roots contain around 4% potassium or calcium salt of glycyrrhizinic acid. Glycyrrhizin is 50 times sweeter than cane sugar.
A new study by the ACS Journal of Natural Products suggests that the compounds in liquorice, licoricidin and licorisoflavan A, are effective antibacterial substances and could have a vital role in treating and preventing tooth decay and gum disease.1
